Summary

Under the direction of the Casino General Manager , the Kitchen Manager is responsible for, including but not limited to, overseeing the daily operations of the Casinos kitchen, and producing diversified menus in accordance with the casinos policy and vision. The Kitchen Manager must work to increase long-term profitability through continuous improvement of team member morale, guest satisfaction, and excellence in operations execution. This position must provide the highest level of service and care to our guests and to our team members.

Essential Duties and Responsibilities

  • Provide leadership, people development, time management, problem-solving and decision-making skills.
  • Ensures that all associates working in the kitchen are performing to the standards set by the Kitchen Manager and Red Deer Resort & Casino.
  • Produce high-quality dishes that follow up the established menu and level up to the Red Deer Resort & Casino standards, as well as to guests requirements.
  • Plan the food design to create a perfect match between the dishs aspect and its taste.
  • Assumes responsibility for the quality of products served.
  • Hire and train auxiliary kitchen staff to provide the best results in minimum time and using the maximum available resources.
  • Schedule staff shifts and assign tasks to ensure adequate coverage and efficient operation.
  • Provide ongoing coaching and feedback to kitchen staff to promote skill development and performance improvement.
  • Address any issues that arise among kitchen staff and take appropriate disciplinary action when necessary.
  • Maintain order and discipline in the kitchen during working hours.
  • Monitor food costs to ensure profitability and budget compliance.
  • Implement cost-saving measures without sacrificing food quality and customer satisfaction.
  • Minimize food waste through proper inventory management and portion control practices.
  • Ensure hygiene and food safety standards are met or exceeded in all stages of food preparation
  • Ensure all professional equipment is in good working order and report any malfunctions before they affect staff or service levels.
  • Must always follow all Occupational Health and Safety guidelines.
  • Maintain a positive and professional approach with coworkers and customers.
  • Other duties or tasks assigned by the Casino General Manager


Education, Qualification and Requirements

  • Minimum 5 (five) years of culinary experience in a high-volume, full-service restaurant, hotel, or casino.
  • Experience in the Casino Industry is an asset.
  • Culinary school completion, including Red Seal Designation, preferred.
  • Knowledge of best practices for training kitchen staff and implementing kitchen procedures.

  • Familiarity with menu costing procedures.
  • Excellent organizational skills and leadership skills.
  • Strong communication skills, both written and oral.
  • Excellent work ethic; driven, organized, dependable, and flexible.
  • Must be fluent in English, both written and oral.
  • Physically able to perform duties of position including but not limited to:
    • Standing for long periods of time with intermittent walking at times
    • Frequently lifts and/or carries up to 50 pounds.
    • Continual use of manual dexterity and gross motor skills with frequent use of bi-manual dexterity and fine motor skills
    • Ability to reach hands and arms in any direction and kneel, bend at the wait with repeated stooping.
  • As a condition of employment, associates are to have a criminal record check prior to their first day of work.


Work Environment

  • Able to stand and walk repeatedly over the course of a shift.
  • Ability to tolerate exposures to heat, cold and water.
  • Ability to work in a noisy and distracting environment.
